Too much arugula??
Try The Uproots Arugula Pesto:
Healthy handful of arugula (I put enough the Cuisinart so it is full)
1/2 cup toasted walnuts
two cloves chopped garlic
1/4cup olive oil
1/2 t salt (to taste)
water or veggie broth to bring to the consistency you like!
Use, refrigerate or freeze for the wintery months when you are missing greens!
